Upkari is a side dish mostly done with vegetables. It is better to cook the
vegetables
with just enough water- never over-cook. Vegetables like ridge gourd and snake
gourd)
If they are very tender) do not need water for cooking. For some upkaris a piece
of
jaggery( optional) is added.
Ingredients
* finely chopped vegetables
* oil
* mustard
* red chillies
* jaggery (optional)
* salt
Method
Season with a little oil and mustard seeds and red chillies.
When they splutter, add vegetables and salt and just enough
water.
Cover and cook until tender.
Upkari can be garnished with coconut gratings.
Yam has to be cooked in the pressure cooker and then seasoned.
