Kulfi

                   This is a  time consuming recipe, but I like it.

Ingredients

  • 1 1/2 litre milk
  • 2 tablespoons cornflour
  • 3/4 cup sugar
  • 1 litre milk dried down into khoa ( low stove, till semi-solid)
  • 1 cup cream
  • 2 tablespoons pistas
  • 2 tablespoons almonds
  • cardamom powder

Method

Mix the cornflour in a little milk.

Bring the rest of the milk to a boil, and allow to continue boiling while stirring with a wooden spoon.

Remove from heat, and add the cornflour.

Back to low heat , and stir continously till the milk thickens and coats the back of a spoon.

Add the sugar, khoa, nuts, cream and cardamom powder.

 Freeze overnight in kulfi moulds.
