This one is lighter, both on the wallet as well as the waist-line. Originally from Nicola, but I have made a few changes in the recipe to suit my taste.
Ingredients
- 4 eggs
- 200 grams Amul butter
- 200 grams bura sugar (powdered)
- 200 grams maida
- 100 ml caramel
- 1/2 teaspoon mixed spice
- 1 1/2 teaspoon vanilla essence
- 30 grams cocoa
- 20 ml glycerine
- 2 tablespoons dark coffee
- 1 teaspoon baking powder
- 250 grams peel
- 250 grams cherries
- 100 grams sultanas
- 100 grams cashew
Method
Soak the chopped fruit in rum for 2 days.
Sift the flour, baking powder, salt, spice and the cocoa.
Cream together the butter and the sugar, and add eggs one at a time, beating well after each addition.
Fold in the flour mixture gently.
Add the essences and lastly stir in the fruit mixture.
Pour into a greased lined 7"(square) pan .
Bake on Gas mark 3 for 1/2 an hour and the on Gas Mark 2 for around one hour.
Check with a skewer pierced through the center. If it is ready, the skewer will come out clean.
