Carrot Cake

       This is Althea's recipe. One of the few recipes that use oil instead of butter.

Ingredients

  • 3 eggs
  • 1 1/2 cup sugar
  • 2 cups grated carrot
  • 2 cups maida
  • 1 1/2 cup oil
  • 1 1/2 teaspoon soda bicarbonate powder
  • 100 grams walnuts
  • 1 teaspoon garam masala
  • 2 cups dates

Method

Soak dates in 1/4 cup of water with the soda bicarbonate powder mixed in.

 Beat together the oil and the sugar.

 Add eggs, one at a time, beating well after each addition.

Add dates, walnuts and carrots. Mix well.

Add vanilla essence, garam masala.

Lastly fold in the flour.

Bake in a lined greased pan. Serve warm.
